This is news to me and a little disturbing that you can't count on capped honey being safe. Wow, I don't have one of those instruments you mentioned to measure moisture. Will be aware when I harvest this year if the honey seems thin. Even though I have no intention of harvesting this year I'm glad to know that it's possible. I was going to suggest making mead - it's wonderful, especially with light honey!
